J Summer in Texas is only beginning to be hot, so, I’m trying to enjoy the great outdoors as much as possible before the sun drives me inside under the A/C on a regular basis. Poolside today is another refreshing escape. You can also prepare a non-alcoholic version of this by substituting sparkling cider or ginger ale for the sparkling wine. SUMMER FRUIT PUNCH! Ingredients 2 Cups diced stone fruit, (apricots, plums, peaches, nectarines) 2 Cups apricot juice 2 Cups sparkling white wine 1 cup club soda peach slice for garnish Combine diced fruit, apricot juice, sparkling wine, and club soda.   Divide among 4 ice-filled glasses. I celebrate Easter for a much bigger reason and it is actually a solemn occasion for the week leading up to a special Easter Sunday. However, the secular celebration of Easter conjures up images of bunnies, carrots, Easter eggs, and candy. In honor of the secular observance of Easter, here’s a spin on the margarita. CARROT CAKE MARGARITA! 1   oz carrot juice ½ oz red grapefruit juice ½ oz lemon juice 1 t agave nectar 1 ½ oz blue agave tequila Garnish with lemon and lime Combine all ingredients, shake and strain over ice into margarita glass rimmed with sugar.   Garnish with lemon and lime slices-float a baby carrot if you feel hoppy. ...
