Saturday Sippers in The Locker Ahoy Fellow Fathomers! Welcome to the feature here in The Locker called Saturday Sippers. Each week I’ll post a new, sometimes, skinny cocktail recipe for you to try. Many thinks to my Cali Bestie, Rhonda, for providing me with the deck of cards recipe book. J Summer in Texas is only beginning to be hot, so, I’m trying to enjoy the great outdoors as much as possible before the sun drives me inside under the A/C on a regular basis. Poolside today is another refreshing escape. You can also prepare a non-alcoholic version of this by substituting sparkling cider or ginger ale for the sparkling wine. SUMMER FRUIT PUNCH! Ingredients 2 Cups diced stone fruit, (apricots, plums, peaches, nectarines) 2 Cups apricot juice 2 Cups sparkling white wine 1 cup club soda peach slice for garnish Combine diced fruit, apricot juice, sparkling wine, and club soda.   Divide among 4 ice-filled glasses. Garnish with peach slice.   203 Calories

The palm trees are blowing, the sand is soft, and the sun is shining- no better day to try this new drink than poolside or surfside. ISLAND BREEZE PUNCH! Ingredients 1 ½ ounces passion fruit flavored vodka 1 Tablespoon lime juice 1 Tablespoon lemon juice ¼ teaspoon orange extract 2 Tablespoons sugar-free pineapple syrup* ½ cup club soda Lemon and lime slices for garnish Mix all ingredients and serve over ice. Garnish with lemon and lime slices. Using real pineapple juice will raise the calorie content from 103 Calories, but, it tastes better!

J My beautiful, international daughter, Aliena, brought me wonderful elderflower syrup during her most recent visit from Germany. She and her mother make the syrup to add to various drinks. How delighted I was to find the following recipe. ELDERFLOWER SPARKLERS! Ingredients 8 T elderflower concentrate or juice 2 cups brut or extra-dry champagne 2 cups club soda Edible flowers or mint sprigs for garnish Directions Place one tablespoon of elderflower concentrate in each of 8 champagne glasses. Add ¼ cup champagne to each glass, and then top off with ¼ cup club soda. Garnish with flowers or mint. 54 Calories

Ingredients 1 ½ Oz Gin 1 ounce lemon juice 2 T sugar Club soda Lemon slice for garnish Directions Mix gin, lemon juice, and sugar in a glass. Add club soda to taste. Add ice cubes. Garnish each with a lemon slice.

Ingredients 1 BOTTLE dry red wine 1 cup light orange juice ¼ cup brandy or cognac ¼ cup orange liquer 1 pkg sugar substitute 2 medium apples, sliced 2 cups club soda Crushed ice Apple slices for garnish Directions Combine all ingredients in a large pitcher, except club soda, ice, and apple slices. Chill at least two hours. Add club soda just before serving. Serve over crushed ice, garnish each with an apple slice. 100 Calories
